Teryiaki pork stir-fry

Who's ready for something delicious?!!
This is one of my favorite dishes of all time. It is quick, easy, healthy and YUMMY!!
I made it the other day, so I thought I would share my recipe with you.
If you don't like some vegetables I used just make it your own and add what you like.
For the teryiaki sauce you'll need:
1⁄4 cup soy sauce
1 cup water
1⁄2 teaspoon ground ginger
1⁄4 teaspoon garlic powder
5 tablespoons packed brown sugar
1 -2 tablespoon honey
2 tablespoons cornstarch
1⁄4 cup cold water
Directions:
Mix all but cornstarch and 1/4c water in a sauce pan and begin heating.
Mix cornstarch and cold water in a cup and dissolve. Add to sauce in pan.
Heat until sauce thickens to desired thickness. Add the water if it's too thick.
Or just skip this madness and buy it :)
And now for the rest of it:
3 pork chops
(That's what I had, but you can use chicken breast, boneless thighs, or beef, this sauce is very good with all kinds of meat.)
1 bell pepper
1 cup of cooked chickpeas
1/2 cup of green onions
1 cup of chopped jew's ears (what a strange name for a mushroom) or champignons
veggies you like ( I used pack of frozen baby carrots and broccoli)
1 cup of teryiaki sauce
1 cup of jasmine rice
salt and pepper to taste
a little bit of oil




First we have to chop everything up and let the meat marinate for a while, that's the most difficult part of our meal preparation. Once it's done we can stir-fry everything starting with green onions, mushrooms that I let simmer for couple of minutes in a hot water, bell pepper, frozen veggies and chickpeas which I soaked overnight in water and then cooked. Add some salt and pepper and let it steam till it's all done. If it gets dry, add some water.





Meanwhile we can prepare the rice. I prefer jasmine rice because it smells sooooo good!! It is a little bit more difficult to make, but it is totally worth it. First we need to rinse the rice thoroughly. Then we fry it on a tiny bit of oil to make it less absorbant and then pour it over with water. We used 1 cup of rice so we need 2 cups of water. Add salt and let it simmer till you can see the rice on the surface. Meanwhile preheat your oven to 200°C and when the rice is ready, turn the oven off and put the rice in for 17 minutes. Make sure that your pot and cover is oven safe, so nothing melts in the heat.

This is the right time to shove it in the oven.
Hmmmmm, the smell is divine!!!
So by this time the stir-fry is done, all the veggies are as soft as we prefer and we have time to make the meat. Just toss it on the pan with a little oil and stir till the juices are gone and the sauce has dark honey color and it sticks on the meat perfectly. And the meat is done of course.




And that's it!!! You can mix it all together or serve everything separately.
