The weather is getting colder and soon we will be glad for any way to make us warm and cozy. So if you're not fed up with everything pumpkin yet, try this delicious soup!!
I have to say I tried the pumpkin soup for the first time the other day and I absolutely love it! Even more so when the pumpkins and the carrots are from my own garden.
So let's get to it.

What you'll need:
One Red kuri squash (hokkaido) (cubed)
2 carrots (cubed)
Onion (chopped)
Cream
Oil
Curry powder
Cardamom
Salt
Fresh black pepper
This recipe is so easy! We just saute the onion, I like to let it brown a little to give richer flavour. Then we throw in the squash and carrots and when they're broiled pour in cca 1,5 liters (about 51 oz) of water. Add the spices to taste (this recipe needs quite a bit of it) and let it cook until the veggies are tender.
Now all you need to do is blend it smooth with hand blender and pour in the cream.
Add more spices if needed and let it boil for a little bit more.
Serve it with drips of cream, toasted bread and steaming hot!!
Hmmmmm, the spicey goodness!!
